| Presenting the Saint-Nectaire AOC Saint-Nectaire cheese has been made in the Monts Dore area for many centuries. 1,187 producers, 287 of whom make cheese on the farm, sustain an essential economic activity in this harsh area. Presenting the AOC Saint-Nectaire, a round and genial cheese, combines a smooth creamy cheese texture and a clear flavoursome taste with a hint of hazelnut to suit informal snacks among friends as well as the most refined meals. Its tonnage places it in fifth position among the 37 French cheese appellations.
Indeed it is the appellation which represents the largest volume in terms
of farmhouse production: 5,436 tons were produced in 2001 by 287 farmhouse
producers of the Appellation d’Origine Contrôlée. Shared
between two worlds with different characteristics (dairy and farmhouse
production), Saint-Nectaire cheese strives to reconcile modernity with
respect for “local, loyal and constant customs” which underwrite
any appellation worth its name. Recognition
