An AOC is defined as the “denomination of a country, a region or
a place used to indicate a product originating from it and whose quality
and/or characteristics are due to the geographical environment, including
natural and human factors”.
An AOC protects like a patent that had been designed collectively over
a long period of time and benefits the “heirs” currently present
in the area.
The AOC also protects the use of the “name”, which is synonym
of quality.
AOC labels are controlled by the Institut National des Appellations d’Origine
(INAO).

The AOP is defined as the “name of a region, a specific place or,
in exceptional cases, a country. It is used to indicate an agricultural
product or a food product which originates from the region, the specific
place or the country, and whose quality and characteristics are due essentially
and exclusively to the geographic environment, including natural and human
factors and whose production, transformation and preparation take place
within the limits of the geographic area”.
An AOP guarantees the typical features of a product. It also ensures that
its production and transformation take place within its appellation area,
respecting specific know-how. It is the most protective and restrictive
quality mark.
