The Saint-Nectaire Cheese Syndicate and research

The Saint-Nectaire Cheese syndicate is one of the founding syndicates in the Pôle AOC Massif Central dedicated to research. Via the Pôle, the syndicate carries out research and field studies in partnership with various partners, laboratories, research centres, engineering schools, universities, etc. These partners include INRA, ENITA in Clermont Ferrand, the LIAL MC, Université Blaise Pascal, the SNGTV.

Some examples of the work undertaken include:

  • With SNGTV, a method derived from the HACCP for risk management in farm production has been set up.
  • With the LIAL MC, a study on the origin of Listeria monocytogenes contamination has led to the production of a guide (“Comprendre pour agir” [Understanding for action]) with DGAL funding.
  • With the INRA and the LIAL MC, ageing studies and challenge tests on Listeria monocytogenes have been carried out.

Currently, studies on microbial ecosystems have been set up in some farmhouse units for Listeria monocytogenes and Staphylococcus aureus: "How do microbial ecosystems work?"
All these studies have enabled inspection protocols to be set up for pathogens to be applied to all the actors in the sector, and a “Guide of good practice for maturing AOC Saint-Nectaire” to be prepared.
